Orange Chicken with Bulgur Pilaf 0 Picture

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 tsp finely grated orange zest
  • 1/4 cup orange juice
  • 6 scallions, sliced
  • 3 tblsp fresh oregano, chopped
  • 3 tblsp plus 1 tsp olive oil
  • Salt and pepper
  • 1 pint grape tomatoes, halved
  • 1/2 cup pitted kalmata olives, halved
  • 1 cup bulgur wheat

Preparation

Step 1

1. In a large bowl,toss the chicken with the zest,
half the scallions, 2 tblsp ofthe oregano,
1 tblsp of the oil, and 1/2 tsp each salt/pepper

The chicken can be marinated and refrigerated up to 1 day in advance

2. In a bowl, combine the tomatoes, olives, 2 tblsp
of the oil, the remaining scallions,the
remaining 1 tblsp of oregano, 1/2 tsp salt,
& 1/4 tsp pepper

[This can be prepared & refrigerated 1 day in advance]

3. Heat the remaining tsp of oil in a nonstick skillet
over medium heat.

4. Add the chicken and cook until golden, 8 - 9 mins
per side, adding the orange juice during
the last minute

5. Cook the bulgar according to the package
directions.

6. Toss with the tomato mixture, serve with the
chicken
