Ingredients
- 1 tbsp. chopped ginger root
- 1 tbsp. chopped garlic
- 1 tsp. soy sauce
- 1 tsp. rice vinegar
- 1 tsp. sugar
- 1/2 tsp. freshly ground white pepper
- 1/3 cup vegetable oil (not olive oil)
- 2 tbsp. sesame oil
- 1 tsp. chili oil (optional)
- 4 cups cooked pasta, thin spaghetti, or capellini (8 oz dry)
- 1/4 cup sliced scallions
- 1/2 cup cilantro leaves
- 1 cup chopped cucumber
- 6 cups shredded iceberg lettuce

Step 1
In a small bowl mix together the ginger root, garlic, soy sauce, vinegar, sugar, pepper, vegetable oil, sesame oil, and optional chili oil until well blended. In a large bowl combine the pasta, scallions, cilantro, and cucumber; toss to mix. Add the dressing and toss to coat. Then add lettuce, toss, and serve
Serves 4-6
