Ingredients

  • 1 cup whole wheat flour, or rye flour
  • 1 cup cornmeal
  • 1 cup white flour
  • 1 cup raisins
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 2 cups buttermilk
  • 1/2 cup molasses

Preparation

Step 1

1. Heat oven to 350. Spray 2 8" loaf pans.

2. Combine flours, cornmeal, raisins, sugar, salt, soda, and spices. Add buttermilk and molasses, stir just until a batter forms. Pour into pans.

3. Bake 40-45 mins, until loaves are firm and pull away from the sides of pans. Cool in pans 15 mins, remove from pans and serve warm. Cool completely before wrapping.

Notes: Very good.
