Ingredients

  • 1/2 Cup popcorn kernels
  • 1 Cup brown sugar
  • 5 oz butter
  • 1 1/2 Tsp. kosher salt
  • 3 oz dark corn syrup
  • 1 vanilla bean
  • 1 Tbsp. cocoa nibs

Preparation

Step 1

Pop corn and set aside in large bowl.
Mix remaining ingredients in a medium pot and bring just to boil, whisking to incorporate.

Cut heat, and pour caramel over popcorn, stirring with two large spoons or rubber spatulas to incorporate very well.

Turn out onto two sheetpans, and bake at 250 degrees for one hour, stirring every fifteen minutes with the spoons.

Stir the popcorn for the first few minutes it comes out of the oven so that it doesn't stick together as it cools. Continue to cool until the popcorn is no longer warm and becomes crispy.

Store in an airtight container for 5 days.
