Ingredients

  • 2 C low fat cottage cheese
  • 2 cloves garlic, minced
  • 2 T grated parmesan cheese
  • 1/4 t black pepper
  • 1 package (10 oz.) frozen chopped spinach, thawed, moisture squeezed out
  • 12 large flour tortillas
  • 1 can (14 oz.) refried beans
  • 1 1/4 C salsa
  • 2 large tomatoes, sliced
  • 1/2 C shredded mozzarella cheese

Preparation

Step 1

Blend cottage cheese, garlic, parmesan, and pepper until smooth. Stir into spinach.

Place 1 tortilla on greased baking sheet. Spread with 2/3 C of beans; top with a tortilla. Spread with 1/2 C salsa; top with a tortilla. Spread with 1 C spinach mixture; cover with tortilla. Start with refried beans again and repeat layers twice. Arrange sliced tomatoes and mozzarella cheese on top.

Bake at 350F for 45-60 minutes; cut into pie-shaped wedges and serve.
