Apple Cinnamon Buttermilk Pancakes

1 tsp baking soda
1 cup flour
1 cup whole wheat flour
2 tbsp baking powder
2 tbsp brown sugar (2 to 3)
1 tsp salt
1 tsp cinnamon
2 eggs, beaten
1 1/2 cups buttermilk
1/2 cup sour cream
1/4 cup melted butter
1 apple, peeled, cored, and grated

Ingredients
- 1 . In a large bowl, mix together the baking soda, flour, baking powder, brown sugar, salt and cinnamon.
- 2 . In another bowl, whisk together the eggs, buttermilk, sour cream and melted butter; add to the flour mixture and stir JUST until the flour is moistened. Stir in the grated apple.
- 3 . Drop a scant 1/4 cup of batter onto a hot lightly greased griddle. Cook, turning once until golden brown.

Notes: Delicious! Sub was to use half whole wheat flour for the all-purpose and added some cinnamon chips. Next time would add another apple.
