Ingredients

  • 1 oz salt pork
  • 1/4 C onion, small dice
  • 1/4 C carrot, small dice
  • 5 garlic cloves, smashed
  • olive oil
  • 2 C roma tomatoes, large dice
  • 1/2 C dry red wine
  • 1 C tomato puree
  • 1 bay leaf, thyme sprig, rosemary and 3 whole peppercorns

Step 1

Heat the pork salt in pot. Add onion and carrot and caramelize. Add 5 smashed garlic. Add tomatoes and deglaze with red wine. Add sachet of herbs. Cover and place in oven at 375 for one hour.
