Ingredients
- 1 oz salt pork
- 1/4 C onion, small dice
- 1/4 C carrot, small dice
- 5 garlic cloves, smashed
- olive oil
- 2 C roma tomatoes, large dice
- 1/2 C dry red wine
- 1 C tomato puree
- 1 bay leaf, thyme sprig, rosemary and 3 whole peppercorns

Step 1
Heat the pork salt in pot. Add onion and carrot and caramelize. Add 5 smashed garlic. Add tomatoes and deglaze with red wine. Add sachet of herbs. Cover and place in oven at 375 for one hour.
