Lemon-Herb Marinade

Makes 1 cup
Amount of marinade is sufficient for about 2 lbs. lamb or chicken pieces. When marinating, use enameled, glass or porcelain bowl.

Ingredients
- 1/2 c. lemon juice
- 1/2 c. oil
- 1/4 c. finely chopped onion
- 1/2 tsp. dried rosemary, crushed
- 1 bay leaf
- 1/4 tsp. pepper

Step 1
Combine all ingredients in saucepan. Bring to a boil. Simmer for 5 min. Cool When cool, add meat of your choice, mixing well to coat evenly. Cover and refrigerate for 4 hrs. or overnight, mixing occasionally. Drain marinade. Broil or barbecue meat to desired doneness, basting occasionally with the marinade.
