This is an inexpensive take on traditional Steak Diane. I make this for my husband, who loves to play with fire. From Great American Recipe card series.

Ingredients

  • 16 ounces top sirloin steaks, each about 3/4-inch thick
  • 2 tablespoons butter
  • 3 tablespoons scallions, thinly sliced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 dash salt
  • 1 dash fresh ground black pepper
  • 2 tablespoons cognac or 2 tablespoons brandy, warmed
  • 3 tablespoons scallions, sliced green parts for garnish
  • 1 lemon, zest of, grated for garnish

Preparation

Step 1

1 Place steaks between waxed paper and pound slightly with a mallet. 2 In small skillet, melt 1 tbsp butter and saute scallion for 2-3 minutes. 3 Stir in worcestershire, lemon juice, and parsley. 4 Keep warm. 5 In a medium-large skillet, melt 1 tbsp butter and brown steaks, about 2 minutes per side. 6 Season with salt & pepper. 7 Pour the onion mix over the steaks. 8 Pour the warmed cognac over the steaks and ignite. 9 If you let a firebug help with this step, do not let them double the cognac :). 10 Serve with pan juices poured over and sprinkled with green onion tops and lemon zest.
