Creamy Mustard Sauce

Makes 2 cups
Good served with: Baked or boiled potatoes, boiled or steamed vegetables (like broccoli, cauliflower, peas or onions) Use as an appetizer dip too with potato or tortilla chips. Serve at room temp. or chilled

Ingredients
- 1 egg
- 1 Tbsp. dry mustard
- 1 1/2 tsp. sugar
- 1 1/2 tsp. butter or margarine
- 1/4 tsp. salt
- 2 tbsp. vinegar
- 1/2 c. mayonnaise
- 1/2 c. whipping cream, whipped
- 1 tbsp. chopped parsley or chives

Step 1
In top part of double boiler, beat egg, mustard, sugar, butter, salt and vinegar. Set over simmering water. Cook for 2 to 3 min., beating with whisk until mixture thickens. Remove from heat. Cool to room temp. Beat in mayonnaise. Fold in whipped cream. Cover and refrigerate until needed. Sprinkle with parsley or chives before serving.
