Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can dark red kidney beans, drained and rinsed
  • 1 can garbanzo beans, drained and rinsed
  • 1 can white beans, drained and rinsed
  • 1 small tomato,k diced
  • 1/4 cup onion, chopped
  • 1 jalapeno, chopped
  • 2 Tbsp. kalamata olives, chopped
  • 1/2 cup Feta cheese
  • DRESSING
  • 4 Tbsp. olive oil
  • 6 Tbsp. red wine vinegar
  • 1 tea. Dijon mustard
  • 1 Tbsp. grated lemon peel
  • 1/2 tea. sugar
  • 1/4 tea. pepper
  • 1 clove garlic, chopped
  • 1 tea. fresh or dried oregano
  • 2 Tbsp. chopped fresh or dried parsley

Preparation

Step 1

Place beans and vegetables in a large bowl. In a separate bowl whisk together all dressing ingredients. Pour dressing over bean and vegetable mixture. Cover and allow salad to marinate about 1 hour in refrigerator. Before serving, stir and top with crumbled Feta cheese.
