Smoked Cheddar Mashed Potatoes

Ingredients
- 2 lbs russet potatoes
- 8 tbs (1 stick) unsalted butter
- 1 1/4 tsp salt
- 1 cup half and half
- 2 tbs grainy mustard
- 3 ounces smoked cheddar cheese, grated

Preparation
Step 1
1. Put potatoes in large saucepan with water to cover by 1 inch and bring to boil over high heat, reduce to medium, and simmer until potatoes are just tender, 20-30 minutes, drain.
2. Set ricer over over now empty saucepan. Spear potato with dinner fork, then peel off skin with paring knife, repeat with remaining potatoes. Working in batches, cut peeled potatoes into rough chunks and drop into ricer. Rice potatoes into saucepan.
3. Stir butter into potatoes until just incorporated. Sprinkle salt and pepper and add warm half and half, mustard, and cheese until just combined, Serve.
