Ingredients

  • 15

    oz red kidney beans

  • 15

    oz garbanzo beans

  • 15

    oz white Northern Beans

  • 15

    oz black beans

  • 1

    onion, finely chopped

  • 15

    oz corn (may use can, fresh, or frozen)

  • 1

    small bunch cilantro (chopped)

  • Dressing:

  • 1/4

    cup olive oil

  • 3

    TBS balsamic vinegar

  • 1-2

    tsp chili powder or cajun seasoning

  • 1/2

    tsp salt

  • 1/2

    lime, juiced (1-2 TBS)

Directions

Drain all beans and rinse well. Combine and mix in large mixing bowl. Add onion, corn, and cilantro and mix well. Mix dressing ingredients well, and add to caviar mixture to taste...blend well. Refrigerate for a few hours or overnight. I double the dressing ingredients and add 1/2 and save 1/2 to mix in prior to serving, as the caviar mixture absorbs a lot of the dressing.
