Ingredients
- 2 boneless chicken breasts
- 1 egg
- salt and pepper
- 1/4 cup flour
- 1/4 cup cornstarch
- peanut oil
- lemon sauce
- LEMON SAUCE
- 1 cup sugar
- 2/3 cup water
- 2 Tbsp. cornstarch
- zest from 1 lemon
- juice from same lemon
- 1/4 tea. ginger
- 1/4 tea. garlic powder
- dash of pepper
- 1/8 tea. turmeric powder
- dash salt
- 1 Tbsp. butter

Step 1
Half chicken lengthwise to make 4 pieces. Heat oil in a deep pan. Dip chicken parts into mixture of the beaten egg, salt and pepper. Mix together flour and cornstarch. Dip chicken in egg batter the coat with flour mixture. Depp fry in hot oil until browned. Drain, place on heat proof platter and pour hot lemon sauce over. Serve with rice.
LEMON SAUCE: In medium saucepan over low heat, mix all ingredients together stirring constantly about 15 minutes or until mixture is clear and thickened. Pour over chicken. Can be made first and put a lid on it and set off the burner. Then cook the chicken while the rice is boiling.
