- 1 cup full-bodied red wine
- 100 g caster sugar
- 4 egg yolks
- lady fingers, to serve

Step 1
1. Put the wine in a pan and simmer gently over medium heat for 6-8 minutes until reduced by half. Leave to cool then stir in 50g sugar. Put the yolks and the remaining sugar in a heatproof glass bowl. Beat with an electric beater for 3-5 minutes or until thick and pale.
2. Place the bowl over a saucepan of simmering water and whisk for 8-12 minutes, gradually drizzling in the red wine syrup, until the mixture almost triples in volume and is light, foamy, and holding soft peaks. TAke care not to get it too hot ro it will start to cook around the edges of the bowl and lose volume.
3. Spoon into four tall glasses or bowls and serve warm with sponge fingers.
