Stir Fried Broccoli with Chili Garlic Sauce 1 Picture

Ingredients

  • Garlic oil:
  • 1.5 pounds broccoli, cut florets into 1/2 inch pieces. Peel stalk and cut into 1/4 inch pieces
  • 1/2 Teaspoon sugar
  • 2 Tablespoons vegetable oil
  • 2 Teaspoon vegetable oil
  • 3 cloves garlic, minced
  • 1/4 Teaspoon red pepper flake
  • Main sauce:
  • 1/3 Cup vegetable broth
  • 1 Tablespoon dry sherry (I substituted rice vinegar)
  • 1 Tablespoon soy sauce
  • 1 Teaspoon toasted sesame seed oil
  • 1 Teaspoon cornstarch
  • 1 Tablespoon Thai chili sauce (or chili-garlic sauce)
  • 1/2 Teaspoon Sriracha (optional)

Step 1

1. Whisk broth, sherry, soy sauce, sesame oil, cornstarch, and chili-garlic sauce together in small bowl. Combine garlic, pepper flakes, and 1 tsp oil in second small bowl.

2. Heat remaining tablespoon oil in 12 inch skillet over medium-high heat until just beginning to smoke. Add broccoli and sprinkle with sugar; cook, stirring frequently, until broccoli is well-browned, 8-10 minutes.

3. Push broccoli to sides of skillet to clear center; add garlic-oil mixture and cook, mashing with rubber spatula, until fragrent, 15 to 20 seconds. Stir to combine garlic mixture with broccoli. Add broth mixture and cook, stirring constantly, until florets are cooked through, stalks are tender-crisp, and sauce is thickened, 30 to 45 seconds. Serve.

To make with hoisin and five spice powder:

1. Substitute 3 tablespoons hoisin sauce for sherry, 1/8 teaspoon five spice powder for chili-garlic sauce, and increase soy sauce to 1 tablespoon. Reduce garlic to 1 clove and proceed to follow above from step 2.

To make with orange and ginger:

1. Substitute 1/4 cup orange juice for sherry and omit toasted sesame oil and chili garlic sauce. Reduce garlic to 1 clove, and increase red pepper flakes to 1/2 teaspoon, and add 1 tablespoon finely grated ginger to garlic oil mixture in step 1. Proceed with above from step 2.
