Ingredients
- 2 C lentils
- 2 C. brown rice
- 1 lg onion, chopped
- 1 T minced garlic
- 1/4 C olive oil
- 3 lbs tomatoes, chopped
- 1 C water
- 2 1/2 T vinegar
- salt and pepper
- Frozen Brussels sprouts

Preparation
Step 1
Cook lentils and rice.
In food processor, process onion, garlic, olive oil, tomatoes, water, vinegar, salt and pepper until smooth. Add to sauce pan and simmer for 20-30 minutes.
Layer lentils then rice then tomato sauce on serving plates.
Cook brussels sprouts, season with butter, salt and pepper.
