Step 1

Mix the Graham Cracker crumbs with the melted butter and sugar, press on to the bottom of a spring form cheesecake pan.
Over a water bath (bain marie) warm the cream cheese and beat until fluffy. Add the lightly beaten eggs,sugar and flour, mix well. Add the condensed milk, vanilla and lemon extracts and the lemon zest.

Step 4 Notice the FoilWrap the bottom of the pan in foil, saves any leakage.
Pour the mix on top of the crust, tap the pan on the table to even out the mix.
Bake in a pre-heated 300 degree oven for approximately 1 hour.
Cool, cool, cool did I say cool, it's very important, before torching the sugar.

Step 5 Did you check your fire insurance policy?Remove Cheesecake from the pan and place on a serving plate.
Dust lightly with the sugar mix.
In a too and throw action using a small blow torch (most gourmet stores carry these now) caramelize the sugar adding a little more sugar as you go.
Let dry and get crunchy before serving.

Step 6 If you prefer you can place the cheesecake under your broiler and carefully caramelize.
