Ingredients

  • 2 lbs. pork cubes
  • 2 tbsp. oil
  • 1 c. boiling vegetable, beef or chicken stock
  • 3 tbsp. lemon juice
  • 1 clove garlic, minced or pressed
  • 1 tsp. dried rosemary
  • salt and pepper
  • 1 pkg. (10 oz.) frozen peas
  • 1 pkg. (10 oz.) frozen broccoli spears

Step 1

Pat pork cubes dry with paper toweling. In heavy skillet, brown pork in the heated oil. Transfer pork to casserole with lid. Add boiling stock, lemon juice, garlic and seasonings. Cover and bake at 350° for 1¼ hrs. or until pork is almost tender. Add peas and broccoli. Cover and bake 15 min. longer or until vegetables are heated through.
