Ingredients
- Dressing :
- 1/2 cup each of cooked chickpeas, black beans, and kidney beans
- 2 chopped green onions
- 1 finely chopped shallot
- 1 medium-sized diced green pepper
- 12 halved cherry tomatoes
- 1 clove minced garlic
- 1 Tablespoon dijon mustard
- 3 Tablespoons red wine vinegar
- 1/8 teaspoon cayenne pepper
- 7 Tablespoons olive oil
- juice of 1 lemon

Preparation
Step 1
Combine the vegetables in a large bowl. Combine the first 4 dressing ingredients in another smaller bowl. Slowly pour the 7 Tablespoons of olive oil into the dressing, whisking. Add salt & pepper to taste. Blend in the lemon juice. Pour dressing over vegetables and toss. Marinate at least 30 minutes.
