Honey Breakfast Ham

Some ham oozes a lot of liquid. If this happens, remove meat from skillet and boil liquid down over high heat until pan is almost dry. Add honey and curry powder, return ham to pan and heat through. For a large group of people, you can multiply the recipe and keep ham hot in chafing dish. Good served with: Pancakes, waffles or any style eggs

Ingredients
- 1/2 lb. boneless ham, thinly sliced
- 2 tbsp. butter or margarine
- 2 tbsp. honey
- 3/4 tsp. curry powder
- parsley and chopped red pepper for garnish, optional

Step 1
Heat butter in heavy skillet. Add ham and stir over high heat until ham is heated through. Push ham to one side and add honey to pan. Heat until honey is very thin. Blend in the curry powder. Fold honey mixture and ham together until ham slices are well coated. Transfer to serving platter with scrambled eggs. Garnish with parsley and chopped red pepper, if desired
