Maple Barbecue Ribs

For tangy ribs, replace the Worcestershire sauce, mustard and spices with ½ tsp. five-spice powder and 2 tsp. grated ginger.

Ingredients
- 1/4 c. maple syrup
- 1 tbsp. firmly packed dark brown sugar
- 1 tbsp. Worcestershire sauce
- 2 cloves garlic, crushed
- 2 tsp. paprika
- 1 1/2 tsp. dry mustard
- 1 tsp. cinnamon
- 1 tsp. ground cumin
- 1/8 tsp. salt
- 1/8 tsp. pepper
- 4 racks (1 1/2 lbs. ea.) baby back pork ribs

Step 1
To make marinade, place all ingredients except ribs in a large bowl. Stir well to combine. Place ribs in bowl in batches and rub marinade over surface to coat. Cover and leave to marinate for at least 1 hr, but preferably overnight, in refrigerator. Preheat broiler or grill to medium heat. Place ribs under broiler or on grill, reserving marinade. Cook, turning occasionally, until cooked through, 25-30 min. Baste with any extra marinade during cooking. Serve immediately.
