Ingredients
- 1/2 cup of egg substitute
- 1 egg
- 2 tbs. sugar
- 1/4 cup of margarine, softened
- 2 1/2 cups of flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 cup of honey
- 1 cup of cold coffee
- 1 small ripe banana, mashed

Step 1
Preheat oven to 350 degrees.
Beat eggs in a large bowl. Gradually add sugar and combine well. Blend in margarine. In a separate bowl, stir together flour, baking powder, bakins soda and spices. Gradually add the flour mixture to the egg mixture, alternating with honey and coffee, until well combined. Stir in the banana. Prepare a tube pan by coating with nonstick spray and dusting with flour, shaking to remove excess. Pour batter into pan. Bake for 45 to 50 minutes. Cool completely before slicing.
