  • 1 cup quick grits
  • 4 cups boiling water
  • 4 Thsp. butter
  • 2 eggs, beaten
  • 1 1/2 cups packed shredded cheddar cheese
  • Tabasco sauce
  • Finely grated Parmesan or Romano cheese
  • paprika

Preparation

Step 1

Boil grits in the water for 3-4 minutes.

Remove from heat; add butter, eggs and shredded cheese stirring well to blend. Season with a dash or two of Tabasco. Pour into a buttered l-quart casserole. Bake in a 300-degree oven for 40-45 min¬utes. Sprinkle top with Parmesan cheese and paprika. Return to oven to brown.
