Ingredients
- Dressing:
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon kosher salt
- 1/4 teaspoon sugar
- Salad:
- 1 cup quartered cherry tomatoes
- 1 cup diagonally cut green onions
- 1/2 cup finally chopped parsley
- 1/2 teaspoon chopped freh mint
- 1 (15.8 ounce) can Bush's Best Black-Eyed Peas, rinsed and
- drained
- 2 cloves garlic, minced

Preparation
Step 1
To prepare dressing, combine first 5 ingredients in a small bowl, stirring
with a whisk until well blended.
To prepare salad, combine tomatoes and remaining ingredients in a large
bowl. Drizzle dressing over salad; toss well. Cover and chill.
