Scallops with Garlic and Cognac

Ingredients
- 1/2 pound sea scallops
- 1 clove garlic, chopped
- 1 tbs EVOO
- 1 tsp flour
- 2 tbs cognac
- 1 tbs chopped parsley

Preparation
Step 1
1. Heat a medium saute pan to a medium high heat. Add the oil and saute the garlic for no longer than 1 minute. Season the scallops with salt and pepper and lightly dust with flour. Add to the pan and sear one side, appx. 3 minutes.
2. Flip over the scallops and immediately add the cognac. Let sit for 1-2 minutes and serve while hot. Top with parsley.
