Crostini with Blue Cheese and Fig 1 Picture

Ingredients

  • 1 small baguette or half a regular baguette
  • 1 1/2 tbs EVOO
  • 1 tbs honey
  • 2 oz blue cheese
  • 1/4 cup dried figs
  • 1/2 cup red wine or port

Preparation

Step 1

1. Soak the figs in the red wine until re-hydrated, appx. 20 minutes. Remove the figs from the liquid and thinly slice.

2. Preheat oven to 365 degrees. Slice the baguette on a bias into ten 1/4 inch thick slices. Drizzle enough olive oil on a half sheet try to lightly coat it. Lay the slices of the baguette on the tr forming a single layer. Drizzle olive oil on top and sprinkle with salt and pepper. Bake in the oven for approximately 7-8 minutes. Flip each piece of baguette over and bake for an additional 3-4 minutes until they are golden brown. Remove from try and allow to cool.

3. In a bowl mix together the blue cheese and honey until smooth and soft. Spread the mixture on each crostini and top with fig slices.
