Ingredients

  • 1/3 cup red onion, thinly sliced
  • 2 medium cucumbers, thinly sliced
  • 1 cup water
  • 1 cup cider vinegar
  • 1/2 cup rice wine vinegar
  • 1/2 cup sugar
  • 2 tablespoons kosher salt, plus 2 teaspoons
  • 1 teaspoon mustard seeds
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon celery seeds
  • 1 teaspoon pickling spice
  • 6 cloves garlic, peeled and slightly smashed

Preparation

Step 1

1.Heat jars and lids in simmering water until ready to use. Do not boil. Set bands aside.

2.Add onion and cucumber and garlic cloves to clean jar(s).

3.In a saucepan, add water, vinegars, sugar, salt, mustard seed, cayenne pepper, celery seed and pickling spice . Bring to a boil and simmer for 4 minutes, stirring gently.

4.Carefully pour the hot liquid over the cucumbers, filling to the top of the jar.

5.Cool to room temperature. Top off the pickles with any remaining pickling liquid and refrigerate.
