Ingredients
- 1/4 c. melted butter or margarine
- 3/4 c. sugar
- grated rind of 2 lemons
- 1/4 c. lemon juice
- 1/4 c. all-purpose flour
- 1/8 tsp. salt
- 1 c. milk
- 2 eggs, separated
- 1 unbaked 9-inch pastry shell
- 4 to 5 kiwi fruit, peeled and sliced
- orange segments or mandarin oranges
- 2 strawberries, sliced

Step 1
Thoroughly mix butter, sugar, lemon rind, lemon juice, flour, salt, milk and egg yolks. Beat whites with dash of salt until stiff but not dry. Fold whites into yolk mixture. Pour into pie shell. Bake at 350° for 40 min. on middle-oven shelf. Cool on wire rack. Arrange kiwi fruit slices around outer rim of pie with orange segments in inner circle. Center with strawberry slices. BOILING WATER PASTRY: Put 2/3 cup vegetable shortening in bowl. Gradually beat in ½ cup boiling water, mixing with fork until well blended. Add 2 cups all-purpose flour and 1 tsp. salt, mixing thoroughly. Divide dough into 2 balls. Roll each out to fit a 9-inch pie pan. Place in pan. Trim and flute edge. (This recipe makes 2 9-inch crusts. Make both and refrigerate or freeze one for future use. Wrap airtight.)
