Ingredients

  • Salad:
  • 1 head of organic romaine, chopped, washed, and spun
  • 3/4 cup kalamata olives, halved
  • 1/2 organic red onion, sliced thinly
  • 1 organic English cucumber, chopped
  • Dressing:
  • 1/2 cup organic EVOO
  • Juice and zest of one organic lemon
  • 2 TB raw, organic apple cider vinegar
  • 2 cloves garlic , pressed and 1/2 tsp Himalayan sea salt or Real salt {mash together to make a paste}
  • 1 tsp organic oregano
  • 4 kalamata olives, minced

Preparation

Step 1

In a mason jar, add dressing ingredients. Cover and shake before dressing.

In a large salad bowl, toss together vegetables and olives. Dress as desired.

Store leftover dressing in the fridge.
