- 4 large potatoes, pared
- 2 qts. boiling salted water
- 1/3 c. butter or margarine
- 1 1/2 tsp. dried sage leaves
- 3/4 c. freshly grated Parmesan cheese
- 1/2 tsp. coarsely ground black pepper

Step 1
Rinse potatoes. Cut each into 6 or 8 lengthwise wedges. Drop into boiling salted water. Boil for 5 min. (they should still be firm). Drain. Meanwhile, melt butter in skillet over low heat until butter is almost all brown. Add potatoes and sage. Stir over medium to high heat for 10 to 15 min. until potatoes have absorbed all the butter and are totally cooked. Sprinkle with cheese and black pepper. Serve immediately.
