Ingredients

  • 3 Tablespoons butter
  • 2 cups yellow onions,
  • thinly sliced lengthwise
  • 8 ounces pork breakfast sausage
  • 1 pound penne pasta, cooked
  • 1 1/2 pounds coarsely chopped tomatoes ( or a 15 ounce can diced tomatoes )
  • 12-15 fresh basil leaves,
  • coarsely chopped

Preparation

Step 1

Saute onion in butter at medium-low heat. Add tomatoes and sausage. Saute at medium-high, crumbling the sausage as it cooks. ( Set pasta on to boil if pasta has not been pre-cooked. ) Saute sausage mixture until juice from tomatoes is almost evaporated and sausage is lightly browned. Add basil leaves and cook 1 to 2 minutes. Remove from heat and toss with drained pasta.
