Ingredients
- 2 T olive oil
- 2 red potatoes, peeled, quartered and cut in thin slices
- 2 shallots, cut in slices
- 1 cup mushrooms, sliced (optional)
- 1/2 pound Jimmy Dean's sausage
- 1-1/2 cups frozen peas, thawed
- 1/2 can diced tomatoes (Hunts)
- 2/3 cup Orzo (cooked per package instructions)

Preparation
Step 1
Heat olive oil in 10-12 inch skillet.
Cook potatoes, Shallots and mushrooms until slightly brown.
Put sausage in pan with potato mixture and cook until sausage cooks.
Add peas, tomatoes and cooked orzo and cook until heated through.
