Ingredients

  • 4 oz. self-raising flour (4 heaped tablespoons)
  • 1 level teaspoon baking powder
  • 4 oz. castor sugar (4 rounded tablespoons)
  • 2 large eggs
  • 4 oz. New Stork margarine

Step 1

Sift self-raising flour and baking powder together into bowl. Add castor sugar. Break in eggs. Add New Stork.

Beat with wooden spoon for 2-3 minutes until well mixed. (The mixture should then be lighter in colour and slightly glossy.) Place in two greased and lined 7-inch sandwich tins.

Bake in pre-heated, very moderate oven (325F, Gas No. 3), on the middle shelf for 25 - 35 minutes. Turn out and cool on wire tray. Sandwich cakes together with jam or icing.
