Ingredients
- 1 lb. almond paste
- 4 egg whites, slightly beaten
- 1/2 cup flour
- 1 cup confectioners sugar
- 1 cup granulated sugar
- Pinch of salt
- 12 oz. pinoli nuts

Preparation
Step 1
Put almond paste in bowl and with a fork break into small pieces. Add egg whites and
beat with electric mixer at med. speed, until well blended and smooth. With wooden
spoon stir in flour and confec. sugar, and granulated sugar and salt and stir until
well blended.
Roll slightly rounded teaspoonfuls of dough between hands into balls about 1 inch in
diameter.
Place 2 inches apart, on cookie sheet. Lightly press into rounds 1 1/2 in diameter.
Press several pinoli nuts into top of each.
Bake 20 to 25 minutes at 300 degrees or until golden. Remove to wire rack, cool.
Sprinkle with confectioners sugar. Store several days in lightly covered container
to mellow.
