- 1 envelope unflavored gelatin
- 1 6-oz can frozen lemonade concentrate, thawed, undiluted
- 3/4 C sugar
- 1 C evaporated milk, chilled
- Red food colouring
- 1 frozen 9" pie crust shell, baked

Step 1
Sprinkle gelatin over 1/4 cup of cold water in saucepan, add undiluted lemonade concentrate. Place over low heat; stir constantly until gelatin dissolves, about 5 minutes. Remove from heat; add sugar; stir until dissolved. Chill, stirring occasionally, until completely cooled. Pour chilled evaporated milk into chilled mixing bowl; beat on high speed of electric mixer until stiff, about 5 minutes. Fold in cooled gelatin mixture. Add a few drops of red food colouring to colour light pink. Turn into cooled pie crust shell. Chill until firm, about 2 hours. For a frosty cold pie, place in freezer for 4 hours. If frozen overnight or longer, remove from freezer 15 to 20 minutes before serving. Makes 6 servings.
