Shrimp in Garlic & Wine

Ingredients
- 1/4 cup Olive Oil
- 2 Tbl minced Shallots
- 1 lb shrimp cleaned and deveined
- Flour to cover shrimp
- 3 cloves Garlic
- 1/4 cup White Wine
- Salt & pepper to taste
- 3 Tbl chilled unsalted butter

Preparation
Step 1
Cover shrimp with flour.
Saute shallots over medium heat in olive oil for several minutes.
Lower heat and add garlic. Saute an extra minute.
Increase heat to medium and add shrimp.
Saute several minutes until pink.
Remove shrimp and keep warm.
Add wine, salt and pepper to skillet.
Increase heat slightly and cook until wine has reduced by half.
Reduce heat and whisk in butter.
Add shrimp. Sprinkle with parsley and serve.
