3 large sweet potatoes or 29 oz. sweet potatoes
1 egg
1/3 c. sugar
1/2 tsp. cinnamon
1 tsp vanilla
2 c. mini marshmallows

Preparation

Step 1

Cook fresh potatoes until tender or use canned sweet potatoes. Combine potatoes, egg, sugar, cinnamon and vanilla; mix with electric mixer on medium speed for 2-3 min. Pour mixture into a 2-qt. ungreased baking dish. Bake uncovered at 350° for 25. min. Top with marshmallows and bake for an additional 5 min.
