Ingredients
- 3 T olive oil
- 1/2 t thyme
- 1/2 t oregano
- 3 1/2 # chicken breasts
- 2 shallots, chopped
- 2 tomatoes, sliced
- 1 C chicken stock or bouilion
- salt and pepper
- 1/2 C Italian green olives
- 1/2 C Italian black olives

Preparation
Step 1
Warm oil in saucepan. Stir in thyme and oregano and add chicken. Saute, turning chicken as it becomes golden, 3-4 minutes on each side.
Add shallots and tomatoes and stir til soft, 2-3 min. Pour in 1/2 C of stock and bring to boil. Season to taste with salt and pepper. Add green and black olives, reducing heat to low, cover and simmer gently for 30 minutes.
Stir sauce and pour in remaining 1/2 C stock. Simmer until the chicken is tender about 15 minutes. Transfer chicken to platter with sauce and serve.
