Florida Falling Cake

So named by Erin's Grandmother because the tastes of Florida "fall" into the cake.

Ingredients

• 1 box yellow cake mix (I usually buy anything but the cake mixes that already have pudding in the mix)
• 1 regular box of instant lemon pudding mix
• 1 tablespoon coconut extract
• ¼ cup of fresh squeezed orange juice (approximate)
• 1 cup of confectioner's sugar (approximate)

Preparation

Step 1

Mix and bake cake according to box instructions (with pudding mix and coconut extract added). Mix the orange juice and confectioner's sugar. Poke holes in warm cake and brush/drizzle orange juice glaze on top. (I usually allow it to soak at least a couple hours to ensure it's all the way through the cake.)
