Peanut Butter Butterscotch Cookies

Ingredients

• 1 1/3 C flour
• 1/2 t baking soda
• 1/2 t salt
• 8 T butter
• 1 1/2 C peanut butter (creamy or chunky)
• 1 C sugar
• 1 egg
• 1 t vanilla
• 1 (11 0z) butterscotch chips

Preparation

Step 1

1. Mix flour, baking soda and salt.
2. Beat butter and peanut butter in large bowl til smooth. Gradually add sugar, beating to blend. Beat in egg and vanilla. Stir in flour mixture and butterscotch chips.
3. Form into balls. Using a fork, press balls flat, then press again to form a crisscross pattern. Or use bottom of glass to flatten.
4. Bake cookies until lightly browned, about 15 minutes in 375 degree oven. Cool on sheets for 10 minutes,then transfer to cooling rack to cool completely.
