Ingredients
- 6-8 chicken thighs, skinless and boneless
- 1 onion, finely minced
- 1/4 teaspoon red chili flakes
- 2 large tomatoes, roughly chopped
- 2 cups chicken stock
- 1 cup orzo
- 1/4 pound freshly washed spinach leaves

Preparation
Step 1
Add the onion to a Dutch oven and cook over medium heat until soft, about 2 minutes. Add the chicken. Sprinkle with some salt and pepper. Brown each side until golden, about 3 - 5 minutes per side, using medium heat. Add the red chili flakes and stir.
Add the tomatoes and chicken stock. Stir. Lower the heat to a low simmer. Cover and let cook for 30 minutes. Add the orzo. Stir, then cover and let simmer for 8 minutes. Turn off the heat and stir in the spinach leaves. Let the spinach wilt, this will only take about 1 minute. Serve and eat.
