  • 4 Boneless skinless chicken breasts cooked, shredded
  • 1 14 1/2oz can Stewed Tomatoes, drained
  • 2 cans Green Chilies, chopped
  • 1 28 oz can Enchilada Sauce
  • 1 14 1/2 can Chicken Broth
  • 1 cup Onion, finely chopped
  • 2 cloves Garlic , minced
  • 1 tsp Salt
  • I tsp Ground cumin
  • I tsp Chili Powder
  • 3/4 tsp black pepper
  • 1/4 cup Fresh Cilantro
  • 1 cup Frozen Corn
  • 1 Yellow Squash, diced
  • 2 Zucchini, Diced

Step 1

Combine chicken, tomatoes, chilies, enchilada sauce, broth, onions, garlic, salt, cumin,
chili powder, pepper, cilantro, corn, squash and zucchini in crock pot
Cook on low for 8 hours.
