Ingredients

  • Salad:
  • 10 c mixed baby lettuces
  • 6 mandarin oranges, peeled and segmented
  • 2 pears, cored and cut into 1/4 inch slices
  • 1/2 small red onion, thinly sliced
  • Toasted Pecan Vinaigrette:
  • 2 Tbsp Dijon mustard
  • 1 Tbsp honey
  • 1/4 c extra-virgin olive oil
  • 1/4 c balsamic vinegar
  • 1 c toasted and chopped pecans

Preparation

Step 1

Salad:

In a large bowl, combine lettuces, oranges, pears, and red onion.
Drizzle with Toasted Pecan Vinaigrette, tossing gently to coat. Serve immediately.

Dressing:

In a medium bowl, combine Dijon mustard and honey. Slowly add olive oil, whisking to combine. Slowly add vinegar, whisking to combine. Stir in toasted pecans.
