Ingredients
- Filling:
- 3 cups sweet potatoes, mashed
- 1 cup sugar
- 1/4 cup milk
- 2 eggs
- 1 stick butter (softened or melted)
- 1 tsp vanilla
- Topping:
- 1 cup chopped nuts
- 1 cup brown sugar
- 1/2 stick butter
- 1/4 cup flour
- 1/4 cup oatmeal

Preparation
Step 1
Filling:
Beat egg whites until they form peaks, set aside. Mash sweet potatoes, mix sugar, milk and butter into sweet potatoes. Fold in egg whites. Put in souffle dish.
Topping:
Melt butter and mix in all ingredients (nuts, brown suger, flour and oatmeal).
Add to top of dish.
Bake at 350 degrees for 45 mintues
