Ingredients

  • 1 pound potatoes, scrubbed and halved
  • 1 1/2 pounds of stew meat cut into 1 1/2 inch cubes
  • 3/4 pounds of small white onions ( or 1 large onion roughly chopped)
  • 2 large carrots, trimmed, peeled and cut into rounds (sliced)
  • 1-2 large cloves of garlic, minced
  • 3/4 pound mushrooms, quartered
  • 1 14 oz can tomatoes, coarsely chopped, including the juice
  • 1 14 oz can of beef stock
  • 1/2 cup dry red wine
  • 2 bay leaves
  • 1 1/2 tsp dried thyme
  • 1/4 cup chopped parsley
  • salt and pepper to taste

Step 1

Chop 4 of the potatoes. Place potatoes in cooker. Season meat with salt and pepper and put in cooker. Add onions, carrots, garlic, mushrooms, tomatoes, stock, bay leaves and thyme. Stir, making sure there is liquid on the bottom. Cook for 18 minutes.
Open cooker and remove bay leaves. Stir, adjust the seasonings and garnish with chopped parsley.
