Ingredients
- 1/4 cup olive oil
- 2 cups fettuccine (uncooked)
- 4 cups chicken stock or broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon dried thyme
- 3 tbls soft butter
- 1/2 cup low-fat sour cream
- 1 pound cooked salmon (smoked is best or canned) cut into bite sized pieces
- 2 green onions, chopped
- 1/3 cup grated Parmesan cheese

Step 1
In the cooker, heat oil. Add fettuccine, stock, salt, pepper and thyme. Bring cooker to high pressure and cook 8 minutes. Release pressure and remove lid.
Drain fettuccine through a colander and place in a bowl. Toss butter and sour cream. Add salmon and green onions, tossing gently until mixed. Sprinkle with cheese.
