Ham loaf makes good mini sandwiches on split biscuits. Serve with tangy mustard.

Ingredients

  • 1 lb. fully cooked ham
  • 3/4 lb. ground pork
  • 1 medium onion, chopped
  • 1 Tbsp. oil, preferably canola or corn
  • 1 cup cornbre3ad crumbs or other bread crumbs
  • 2 eggs
  • 1 cup milk
  • 2 Tbsp. prepared yellow mustard
  • 2 Tbsp. Worcestershire sauce
  • 1 1/2 Tbsp. cider vinegar
  • 1/4 tea. ground cloves
  • pinch of ground ginger
  • salt to taste
  • MONDAY NIGHT GLAZE
  • 2 Tbsp. ginger preserves or jelly
  • 1 Tbsp. pineapple or apple juice
  • 1 tea. prepared yellow mustard

Preparation

Step 1

Preheat oven to 350 degrees.

Process the ham in a food processor until minced fine, or grind the ham in a meat grinder. Transfer the ham to a bowl, add the remaining ingredients, and combine well.

Spoon the moist ham mixture into a loaf pan and smooth its surface. Bake the loaf for 45 minutes. While the loaf bakes, combine the glaze ingredients in a small bowl. Brush the loaf with the glaze. Continue baking for another 15-20 minutes, for a total cooking time of 60-65 minutes.

Remove the meat from the oven and let it sit for at least 10 minutes before cutting. Serve hot or cold. Leftovers keep for 3-4 hours.
