Ingredients
- 1 large apple finely diced
- 1 1/2 cups all-purpose flour
- 1/4 cup reg. uncooked rolled oats
- 2 Tbs. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/4 cup milk
- 2 eggs
- 1/4 cup unsalted butter, melted
- 1/4 cup grated cheddar cheese

Preparation
Step 1
Preheat oven to 400 degrees. Butter muffin tins.
In a lg. bowl stir and toss together the flour, oatmeal, sugar, baking powder, baking soda and salt. Set aside.
In a med. bowl whick together the milk, eggs and melted butter until smooth. Stir in the diced apples and grated cheese. Add to the combined dry ingredients and stir until blended. Spoon into the prepared muffin tims. Bake until a toothpick inserted comes out clean, about 20 min. Cool in tims for 3 min. Finish cool the muffins on a rack.
