  • Bottom Layer
  • 2 eggs
  • 1/4 cup oil
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • 16 oz. frozen strawberries
  • Middle Layer
  • vanilla ice cream,
  • Top Layer
  • 16.5 oz drained canned peaches
  • 2 eggs
  • 1/4 cup oil
  • 1/2 cup sugar
  • 1/4 cup lemon juice
  • Optional,strawberry syrup for drizzling when serving

Preparation

Step 1

Place all bottom layer ingredients in the food processor with the knife attachment. Puree and mix for 5-10 min. Pour into 2 9-10" round pans. Freeze well before adding next layer.
Pour ice cream over frozen strawberry layer.Freeze.
Prepare top layer the same way as the bottom layer. When the middle layer is completely frozen add the peach layer and freeze. Cover the pans when completely frozen. Drizzle with Strawberry layer.
